As Commis Chef, you will have previous kitchen experience . You will have mastered the basic skills, and have fundamental knowledge of food. You have a keen interest in food, an eye for detail and a commitment to cleanliness. The role provides the opportunity to move around the kitchen working on various sections such as veg, pastry, fish and sauce to develop and build on basic skills. Responsibilities vary but you will do a lot of preparation work and basic cooking, under the supervision and guidance of more experienced chefs.

As Chef De Partie you will work as part of the team in the Brasserie.  You will have mastered the basic skills, and have fundamental knowledge of food. You will have a hands-on role, with responsibility for preparing, cooking and presenting a range of dishes.  You will be encouraged to contribute ideas and assist in the development of new dishes and menu items.  Careful attention must be paid to hygiene, health and safety and to portion and waste control.

Working in a fine dining restaurant gives you the opportunity to learn about service preparation and to develop your food and wine knowledge. You will be a confident communicator, as much of your time will be spent assisting Chef de Rangs, and guiding Commis de Rangs. The role entails ensuring that the restaurant is ready for service including preparing crockery & cutlery, setting tables and lounge drinks service. In assisting the Chef de Rang you are essential to the smooth running of food service in your area. The level of guest interaction will increase once your basic service skills have developed.
